1. Tomato rice-

Tomato rice is such a delightful dish! It brings together a wonderful blend of tangy and spicy flavours that you can savour in every bite. Preparation time- 5 minutes

Cook time- 15 minutes

Ingredient list- 1 cup raw rice (Chawal)

2 glasses of water (Pani)

2 cardamom (Elaichi)

3 large-sized tomatoes (Tamatar)

2-3 garlic cloves (Lahsun)

6-7 curry leaves (Curry patta)

1 tablespoon ginger (Adrak)

2 green chilli (Hari mirchi)

1 large size onion (Pyaaz)

2 bay leaves (Tezz patta)

1 small cinnamon stick (Dalchini)

2 cloves (Laung)

2 tablespoon oil (Tel)

½ tablespoon asafoetida (Hing)

½ tablespoon cumin seed (Jeera)

½ tablespoon mustard seed (Sarso ke daane)

1 tablespoon turmeric powder (Haldi powder)

2 tablespoons red chilli powder (Laal mirchi powder)

1 tablespoon coriander powder (Dhaniya powder)

Salt as per taste

Instruction-

  • First, wash the rice thoroughly and soak it in water.
  • Next, chop the green chilli, ginger, garlic, onion, and tomato into small pieces.
  • Now, turn on the gas and place a pressure cooker on the heat.
  • Add oil to the cooker.
  • Once the oil is heated, add cumin and mustard seeds.
  • Next, incorporate cardamom, cinnamon, bay leaves, and cloves, and roast them well.
  • Then, add the garlic, ginger, curry leaves, green chilli, onion, and tomato to the mixture.
  • Season with salt, red chilli powder, turmeric, and coriander powder. (According to the measurements provided above)
  • After that, add the soaked rice along with the appropriate amount of water and close the lid of the cooker.
  • To cook on low flame, use 3 whistles; for high flame, use 2 whistles.
  • To finish, garnish with fresh coriander leaves.
