- We will sauté these spices for a short time and then add the chopped tomatoes, onions, and whole green chillies.
- After cooking these ingredients for a while, we will add spices including coriander powder, turmeric, red chilli powder, salt, garam masala, and roasted cumin seed powder. (According to the measurements provided above)

- Next, we’ll pour in enough water to achieve the desired gravy consistency.
- We will then close the lid and cook it on low flame for 6 whistles.
- Finally, after the cooker has cooled down, we will garnish the dish with coriander leaves and serve it hot with rice.
3. Papad (fryums)-
Papad plays a vital role in Indian cuisine, elevating our meals and nurturing a sense of togetherness. Paired with a warm bowl of chole chawal, it brings forth unparalleled joy and comfort. The diverse range of papads invites us to explore various shapes and colours, transforming each meal into a unique experience. Whether you savour the satisfying crunch of fried papad or the wholesome goodness of roasted papad, there’s something for every palate. Each type unveils its own distinct flavour, encouraging us to discover what resonates most with us. Let’s celebrate the rich tapestry of flavours that papad brings to our culinary journeys!

4. Aachar (pickle)-
There’s a special bond that many Indians share with Achar, beginning right at home. In most households, achar accompanies every meal—whether it’s tangy mango achar or a delightful mixed variety. This cherished condiment, made with love in the kitchen or picked up from the store, adds warmth and flavour to every dish. Achar can transform a simple bowl of rice into something truly comforting. So choose your favourite achar and enjoy it with your chole rice bowl; these little traditions bring immense joy to our dining experiences.

TIP: I suggest we start by carefully washing the rice and soaking the chole in hot water for at least 2 hours, or even overnight. This small step truly makes a big difference in the final dish. While the rice is cooking, we can take our time chopping the vegetables together. Once the rice is ready, we’ll move on to preparing the chole, which I know you’ll enjoy. Finally, after we fry the papad, we can create a beautiful thali to serve, complete with rice, chole, papad, aachar, and salad. It’s all about enjoying the process together!
