Ingredient list- 3 medium-sized Aalu
3 tablespoon oil
1 tablespoon red chilli powder (laal mirchi powder)
½ tablespoon turmeric powder (Haldi)
Salt as per taste
Coriander leaves for garnishing
Instructions-
- First, we will wash the potatoes thoroughly.
- Next, we will cut the potatoes into the shape of french fries.
- After that, we will prepare a mixture of turmeric, salt, and red chilli powder, and mix it well. (According to the measurements provided above)
- Then, we will turn on the gas and place a pan on the stove.
- Once the pan is hot, we will pour in some oil and let it heat up.
- Now, we will add the cut potatoes and fry them until they are cooked nicely.
- Finally, we will garnish the fries with coriander leaves and serve them hot with parathas.
2. Hing Aalu recipes-
Hing Aalu sabji is absolutely delicious and super simple to make! If you’re heading out on a trip, it’s a great idea to pack this dish along with some Pudi or Paratha. You won’t have to worry about any spills and trust me, it tastes amazing!

Ingredient list- 3 medium-sized Aalu
2 green chilli
3-4 garlic cloves
2 tablespoon oil
1 tablespoon cumin seed (Jeera)
1 tablespoon mustard seed (Rai)
½ tablespoon asafetida (Hing)
1 tablespoon red chilli powder (laal mirchi powder)
½ tablespoon turmeric powder (Haldi)
1 tablespoon coriander powder (Dhaniya powder)
½ tablespoon garam masala
Salt as per taste
Coriander leaves for garnishing
Instructions-
- First, grab 2 potatoes (Aalu) and wash them well.
- Once they’re clean, cut them into small cubes.
- Next, take 2 green chillies—feel free to chop them up finely or just slit them down the middle if you prefer.
- Lastly, take 3-4 garlic cloves and either chop them into pieces or give them a good crush.
- Now turn on the gas and heat a pan with 2 tablespoons of oil.
- Once the oil is hot, add cumin seeds, mustard seeds and hing, and sauté briefly.
- After sautéing, incorporate green chillies or garlic, cooking until they lose their raw smell.
- Next, add some spices such as red chilli powder, turmeric, coriander powder, salt, and garam masala. (According to the measurements provided above)
- After mixing the spices well, add cubed or finely chopped aalu (you can also use boiled aalu) and cook until they are soft.
- Once everything is cooked, finish by adding freshly chopped coriander leaves. This dish can be served with pudi or paratha.
3. Aachari aalu recipes-

Ingredient list- 3 medium-sized Aalu
1 cup dahi
2 green chillis
½ tablespoon ginger
1 tablespoon Achaar Masala
1 tablespoon red chilli powder
1 tablespoon coriander powder
½ tablespoon turmeric powder (haldi powder)
2-3 tablespoons sarso tel
½ tablespoon jeera
1 bay leaf
2 dry red chilli (sukhi lal mirch)
¼ tablespoon hing
¼ cup water
Coriander for garnishing
Salt to taste
Instructions-
- First, take a large bowl and add the curd.
- Next, make a paste of chilli or ginger and mix it into the curd.
- Then, incorporate the pickle masala, salt, turmeric, red chilli powder, and coriander powder into the mixture, stirring well to combine. (According to the measurements provided above)
- Wash the potatoes thoroughly and cut them into cube-shaped pieces.
- Turn on the gas and place a pan on the stove.
- Pour some oil into the pan and heat it slightly.
- Add asafoetida (hing), cumin seeds, and either dried red chilli or a bay leaf to the pan, allowing them to roast for a moment.
- Once the spices are fragrant, add the diced potatoes to the pan and fry them until they are well-cooked.
- After frying the potatoes, pour in the curd mixture and add a little water if needed.
- Mix everything together thoroughly.
- Finally, after everything has cooked well, add fresh coriander as a garnish and serve hot.
4. Masala aalu recipes-
If you’re craving something spicy and delicious, you’ve got to give this masala aalu a try! It’s packed with flavour and can be ready in just 20-25 minutes. Perfect for a quick and tasty meal!

Ingredient list- 3 medium-sized boiled Aalu
2 tablespoon oil
1 tablespoon cumin seed (Jeera)
1 tablespoon red chilli powder (laal mirchi powder)
½ tablespoon turmeric powder (Haldi)
½ tablespoon roasted cumin powder (Jeera powder)
1 tablespoon coriander powder (Dhaniya powder)
1 tablespoon dry mango powder (amchur powder)
1 tablespoon kasuri methi(optional)
Salt as per taste

Instructions-
- First, wash three aalu thoroughly and boil them.
- Once boiled, cut the aalu into small cubes.
- Next, place a pan on the stove and add two tablespoons of oil.
- When the oil is hot, add cumin seeds, red chilli powder, turmeric, cumin powder, dry mango powder, coriander powder, salt, and kasuri methi. (According to the measurements provided above)
- Fry the spices well until they are aromatic.
- Then, add the boiled cubes to the pan and mix them thoroughly with the spices.
- Finally, sprinkle chopped coriander leaves on top for garnishing.
5. Aalu chokha recipes-
Aalu Chokha is such a delicious and popular dish from Bihar! It’s so versatile—you can enjoy it with roti, paratha, or even rice. Plus, it only takes about 20 minutes to whip up, making it a quick and satisfying meal. The flavours are simply heavenly! If you haven’t tried it yet, you’re in for a real treat!

2 tomato

Instructions-
- First of all, we will wash 3 aalu thoroughly and boil them.
- Now we will roast 2 tomatoes on the gas stove.
- Once they are roasted, we’ll peel and clean the tomatoes.
- Next, we’ll take a large onion and cut it into bite-sized pieces.
- We’ll also chop two green chillies into smaller pieces.
- Now, we’ll take a big bowl and mash some boiled aalu using our hands.
- In the mashed aalu, we will add the roasted tomatoes, chopped onion, and green chillies, then mix everything well.
- Next, we will add some spices to the mixture, including mustard oil, red chilli powder, roasted cumin powder, coriander powder, and salt. (According to the measurements provided above)
- After mixing all the ingredients thoroughly, we’ll squeeze in some lemon juice and mix it again.
- Finally, for a fresh taste, we will add coriander leaves and serve the dish.
